Could carry a pocket knife and use it if I ever attacked? Is that illegal? I live in New York?

I carry a knife in her purse when I walk because I am young 17 years living in a bad neighborhood. I have it just in case I am robbed or raped. I have curiosity, if I'm being attacked by a man. "I can stab it with a pocket knife and not get into trouble as self-defense? Even if the weapon is illegal? On the other hand, what if I am attacked by three dogs my size x2. Can I stab and without getting into trouble. Note: I love dogs, but I worry if it was ever attacked and if not stop attacking me, but I spray with pepper spray. Could I still stab them?
